Banana cake recipe

Ingredients for two loaves or two nine inches baking dishes.
On charcoal, one metal cooking-pot (9 inches diameter)
- Six to eight fingers of ripe bananas
- Half Kg all purpose flour
- Pinch of salt
- One and half tea spoon of vanilla flavouring
- Two tea spoons of baking powder
- One tea spoon of bicarbonate of soda
- Three eggs
- One cup (175gr) sugar
- One cup (250 ml) milk
- One cup (250 ml) vegetable oil
Optimal: coarsely groundnuts, raisins, chocolate chips
Preparation
- Grease and lightly flour baking dishes
- Mash with a fork the bananas and set aside
- Beat eggs and sugar until foaming, add the milk and the oil
- In a separate bowl mix the flour, salt, baking powder and bicarbonate of soda
- Gradually add the liquid mixture to the flour and stir well with a wooden spoon.
- Add vanilla and the bananas, pour into baking dishes
- Bake at 180° C for 60 to 70 minutes or until wooden pick inserted in center comes out dry.
Charcoal under and also on the top of the cooking-pot, low heat.
- Remove cakes from baking dishes and cool.
Note: Instead of vanilla, half a teaspoon each of cinnamon, clove and nutmeg powder can be used. If nuts and raisins
are used, add these after the bananas, ground nuts can also be sprinkled on top of the cake before putting in the oven.
